Creating the Perfect Puff Pastry

First, let's focus on the heart of this dessert – the homemade puff pastry. To make this delicate and flaky pastry, you'll need: one cup of very cold, cubed butter, two and a half cups of flour, and half a cup of very cold water. Using a food processor, mix these three ingredients together until a smooth dough forms.

Once the dough is ready, roll it out into a rectangular shape on a lightly floured surface. Fold the dough into thirds, like a letter, and then rotate it 90 degrees. Repeat this process three more times, chilling the dough in the refrigerator for 15 minutes between each fold. This technique will create those irresistible layers that puff up beautifully when baked.

The Apple Filling

While the puff pastry chills, it's time to prepare the apple filling. Choose your favorite variety of apples, preferably ones that are sweet and slightly tart. Slice the apples into approximately one centimeter rounds and using any small circle tool you have around (bottle caps work well for this), remove the core of each apple round.

Bringing It All Together

Preheat your oven to 350°F. Take the chilled puff pastry out of the refrigerator and roll it into a large rectangle. Slice the rectangle into strips lengthwise. 

Using the pastry strips you cut, start to weave them through the apple until the apple is covered with the puff pastry strips. 

Transfer the pastry to a baking sheet lined with parchment paper and brush the top with equal parts melted butter and maple syrup for a golden, caramalized finish. Bake for 25-30 minutes, or until the pastry is beautifully puffed and golden brown.

Once out of the oven, let the dessert cool for a few minutes before serving. You can enjoy it as is or add a dollop of vanilla ice cream for an extra touch of indulgence.

Puff Pastry:

  • 1 cup of butter (very cold and cubed)
  • 2 1/2 cups of all purpose flour
  • 1/2 cup of very cold water 

Filling:

  • 2 large apples of your choice (we used Cortland)
  • cinnamon (to your liking)
  • to be brushed with equal parts melted butter and maple syrup

Serve warm with a side of vanilla ice cream.
